AITJ for refusing to throw another friendsgiving after my roommate assumed I’d do all the cooking again?

You don’t run a catering service — you did something nice one time, and everyone has mistaken that act of generosity for a repeat obligation. Cooking, cleaning and hosting for a dozen people is a ton of work (and money), especially during the school year while juggling both school and a job. That your roommate chipped in next to nothing last time makes her entitlement even more appalling.

It’s not “ruining a tradition” if you were the only one doing all the work and making it happen. If she wants Friendsgiving to carry on, you can suggest that she take it over (or make it a potluck or think of something else). You’re not selfish for saying no — you’re just refusing to be used again.
